What career do you want to go to for graduate students in or of?
In my cover letter I want to write that I am a graduate student in mathematics. I am not sure about the “in”. What is correct and what is wrong?

You can say I’m a student of statistics, and hence, it wouldn’t be wrong to say graduate student of statistics. I am a statistician. I would not care for the native American English.
I am a graduate student at XYZ majoring statistics. If I am
able to say it ”I’m a graduate student at XYZ” you can say something like that.
